Water soluble vitamins: Vitamin B group, Folic acid, Vitamin C
It is not possible to store these vitamins in the body as they will be discharged with urine or sweat. Thus, it is important to ingest every day.

Fat soluble vitamins: Vitamin A, D, E, and K
It is possible to store these vitamins in our body. Heat resistance, and by cooking with oil, it helps to be absorbed into out body. However, carotene is easy to be oxidized. Thus, it is recommended to cook them without leaving them long after slicing.
